Sauerkraut is a traditional fermented cabbage dish, tangy and crunchy, made with just cabbage and salt. It is rich in probiotics and easy to prepare at home.
1 medium cabbage (shredded) 1 tbsp salt
Place shredded cabbage in a large bowl and sprinkle with salt. Massage cabbage until it releases liquid.
Pack tightly into a clean jar, pressing down so liquid covers the cabbage.
Cover and let ferment at room temperature for 5–7 days.
Store in the fridge and serve as a side dish or topping.
