Patal Poha Chivda is a light and crispy Maharashtrian snack made from thin flattened rice (poha) tossed with peanuts, curry leaves, green chillies, and mild spices. It’s crunchy, salty and slightly sweet, perfect for tea-time or as a quick snack.
2 cups thin poha 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1-2 chopped green chillies, chopped 6-8 curry leaves ½ tsp turmeric powder ¼ tsp asafoetida (hing) ¼ cup peanuts 2 tbsp roasted cashews 1-2 tbsp sugar Salt to taste Fresh coriander, for garnish
Dry roast the poha on a low flame for 2-3 minutes, until crisp, and set it aside.
Heat oil in a pan, add mustard seeds, cumin seeds, curry leaves, green chillies, and peanuts; sauté briefly.
Add turmeric, hing, and sugar if using, mix well.
Toss in the roasted poha and gently mix so it coats with the tempering.
Garnish with coriander and roasted cashews, let it cool, and serve as a light snack.
