Roomali Roti is a skillfully prepared, thin Indian flatbread made from wheat flour and maida. Cooked quickly on a hot inverted kadai, it has a silky, supple texture that soaks up curries beautifully and complements grilled or fried dishes perfectly.
Mix wheat flour, maida, and a pinch of salt with water, then knead into a soft, smooth dough.
Cover the dough, let it rest for 30–60 minutes, and it will turn softer and easier to roll.
Divide the dough into small balls and roll them into very thin, large circles for soft and light rotis.
Heat an inverted kadai or flat tawa on high flame until very hot, ensuring the roti puffs properly when cooked.
Carefully place the thin roti on the hot surface, cook for a few seconds on each side until light brown spots appear, then fold like a handkerchief and serve hot with curry or kebabs.
