Rice paper works well as a light wrap for momos. You can fill it with a mix of veggies, tofu, and simple seasonings. These momos are easy to make and taste great with a soy dipping sauce or chilli garlic chutney.
8-10 rice paper sheets 1 cup of grated cabbage 1/2 cup of grated carrot 1/4 cup of finely chopped capsicum 1/2 cup of crumbled tofu 1 tsp chopped garlic 1 tsp chopped ginger 1 tbsp Soy sauce 1 tbsp Oil Salt to taste Pepper to taste
Heat oil in a pan and sauté garlic and ginger for a few seconds until fragrant.
Add all the chopped vegetables and tofu, and stir-fry for 3 to 4 minutes on medium heat.
Season the mixture with soy sauce, salt, and pepper, then let it cool completely.
Soak one rice paper sheet in warm water for 10 seconds until soft and flexible.
Place a spoonful of the filling in the centre of the sheet and fold it into a neat momo shape.
Steam the momos for 5 to 6 minutes or pan-fry them until lightly crispy on the edges and serve with a crunchy, tangy cucumber salad and a delicious soy dipping sauce.
