Akuri is a traditional Parsi egg dish, cooked soft and spicy with onions, tomatoes, and coriander. It is quick and perfect for breakfast.
3 eggs 1 onion (finely chopped) 1 tomato (finely chopped) 1 green chilli (chopped) 1 tbsp oil Salt and turmeric to taste
Heat oil and sauté onion, tomato, and chilli.
Add turmeric and salt.
Beat eggs and pour into the pan.
Stir gently until soft and creamy, then serve hot with bread.
