Pudina chutney is a refreshing Indian dip made with fresh mint leaves, coriander, green chillies, and spices. Its tangy, spicy, and cooling flavours make it the perfect accompaniment for snacks, idlis, dosas, or parathas.
1 cup fresh mint leaves (pudina) ½ cup fresh coriander leaves 2 green chillies (adjust to taste) 1-inch ginger piece 2 tbsp roasted chana dal (or peanuts for variation) 1 tbsp lemon juice Salt to taste Water as needed For tempering: 1 tsp oil ½ tsp mustard seeds ½ tsp urad dal 6-8 curry leaves
Wash and clean the mint and coriander leaves.
In a blender, combine mint, coriander, green chillies, ginger, roasted chana dal, lemon juice, salt, and a little water, and grind into a smooth paste.
For tempering, heat oil, crackle mustard seeds, add urad dal and curry leaves, and pour this over the chutney.
Serve fresh with dosa, idli, paratha, pakoras, or as a spread in sandwiches.
