Bentota curry is a traditional Sri Lankan-style curry made with fresh spices, coconut milk, and seasonal vegetables or meat. It is aromatic, creamy, and pairs well with rice or roti.
250 g chicken, prawns or vegetables (cut into pieces) 1 onion (sliced) 2 tomatoes (chopped) 2 green chillies (slit) 1 tbsp ginger-garlic paste 1 tsp curry powder ½ tsp turmeric powder 1 tsp chilli powder 1 cup coconut milk 1 sprig curry leaves Salt to taste
Heat oil in a pan and sauté onion, green chillies, and curry leaves until fragrant.
Add ginger-garlic paste, turmeric, curry powder, and chilli powder, and sauté briefly.
Stir in tomatoes and cook until soft, then add meat or vegetables.
Pour in coconut milk, season with salt, and simmer until cooked through. Serve hot.
