A corn and spinach sandwich is a quick and hearty snack made with sweet corn, fresh spinach, and lightly spiced fillings tucked between bread slices. It can be grilled or toasted and is ideal for breakfast, lunch boxes, or evening bites.
Ingredients: 1 cup boiled sweet corn 1 cup chopped spinach 1 onion (finely chopped) 1 green chilli (chopped) 2 tbsp grated cheese (optional) 1 tsp butter ½ tsp black pepper Salt to taste 4 slices of bread
Sauté onion, spinach, and green chilli in butter until soft, then add corn, pepper, and salt.
Spread the mixture on bread slices, top with cheese if using, and cover with another slice.
Grill or toast until golden and serve hot.
