This farmer’s omelette is hearty and colourful, made with eggs, onions, capsicum, and tomatoes. It’s a filling and protein-rich breakfast option.
3 eggs ½ onion (chopped) ¼ cup capsicum (chopped) 1 tomato (chopped) 1 tbsp oil or butter Salt and pepper to taste
Beat eggs with salt and pepper.
Heat oil and sauté onion, capsicum, and tomato for a minute.
Pour in the eggs and spread evenly.
Cook on low heat until golden, then fold and serve hot.
