Spinach kofta curry is a rich and creamy dish made with soft spinach dumplings in a spiced tomato gravy. It tastes restaurant-style yet is simple to make at home.
2 cups spinach (blanched and chopped) 2 boiled potatoes (mashed) 1 onion (chopped) 2 tomatoes (pureed) 1 tsp ginger-garlic paste ½ tsp turmeric, ½ tsp garam masala Oil, salt to taste
Mix spinach and potatoes with salt to make small koftas; shallow fry until golden.
In another pan, sauté onion and ginger-garlic paste, then add tomato puree and spices.
Cook until the gravy thickens.
Add the koftas, simmer for a few minutes, and serve hot with rice or roti.
