Tofu curry is the new trend in India and a nutritious alternative to chicken for vegans and vegetarians. Rich in protein and packed with flavours, it is often accompanied by rice and flatbreads. Check out the recipe.
For Marination 200g tofu 1 tsp chilli powder ¼ tsp salt 1 tbsp kasuri methi ½ tsp garam masala
For Curry 450g tomato puree ¼ cup onion, coconut milk 1 green chilli, bay leaf 1 tbsp ginger, garlic paste ¾ cup peas 2-3 tbsp oil ¼ tsp turmeric ½ tsp salt 1.5 tsp garam masala, coriander 1 cup hot water 2-inch cinnamon 2 cardamoms 1 tsp maple syrup
Marinate thin pieces of tofu with a mixture of salt, chilli powder, kasuri methi and garam masala.
Heat oil in a wok and add whole spices to it. Once the spice starts sizzling, add onions and saute until they are golden brown.
Reduce the heat and fold in green chilli, ginger, garlic, and spice powders. Once masalas are roasted, add tomato puree.
Pour coconut milk and hot water, and cook until the gravy thickens. Add the peas and grilled vegetables.
Once ingredients are cooked, add pan-seared tofu, maple syrup, and half a cup of hot water. Simmer for 10 minutes.
Top the gravy with coconut cream and spring onions. Enjoy it with steamed rice.
